Ingredients

1/2 cup Butter unsalted
1 cup Sugar granulated
1 Egg
1 tablespoon Red Food Coloring
1 teaspoon Peppermint extract
2 cups Flour
1/2 teaspoon Salt
3 tablespoons Cocoa Powder
1 teaspoon Baking Powder
9 Peppermint Hard Candies crushed plus additional for decorating
Frosting
1/2 cup Butter unsalted
2 cups Confectioners' Sugar
3 tablespoons Cocoa Powder
1/8 cup Heavy Whipping Cream
1/2 cup Mini marshmallows plus additional for decorating

For Cookies; in bowl of electric mixer, beat butter and sugar until light and fluffy. Add egg, food coloring, peppermint extract and sour cream.

Beat until blended. Next add flour, cocoa, salt and baking powder. Beat until just blended.

Fold in crushed peppermints. Mix until combined. Refrigerate dough for 30 minutes.

Preheat oven to 375F and line cookie sheets with parchment paper. Drop dough by rounded tablespoons about 2 inches apart on lined cookie sheets.

Bake 8-10 minutes, or until cookies spring back when touched. Cool cookies on wire racks. Cool completely before frosting.

Buttercream Frosting; in bowl of electric mixer, beat butter, confectioners' sugar, cocoa, whipper cream until fluffy.

Add marshmallows and mix to combine. Spread butter cream frosting over cookies.

Sprinkle miniature marshmallows and crushed peppermint candies on top to decorate.
